Oreo Delight

One of my BFFs recently had a birthday, so I made her a special dessert at our last stamping club.  It's called Oreo Delight.  I got the recipe from one of the cooking blogs I follow Meals at the Muirs.  I don't like sugar (I know, totally weird), so I didn't even taste it, but it seemed to be a huge hit.  Let me show you how to make it.  You'll need the following ingredients:

  1 package of regular Oreos, split
1 stick butter, melted
5 oz. box of instant chocolate pudding
2 tubs 8oz. Cool Whips
8 oz. cream cheese, softened
1 c. powdered sugar

Directions:

Crush the whole bag of Oreos in a food processor or in a plastic bag with a rolling pin.  Save a 1/2 cup of Oreos to sprinkle on top of the dessert.

Pour the rest of the Oreos in a glass 9x13 inch dish.  Mix the melted butter in and press down to make a crust.  

In a separate bowl, make the chocolate pudding according to the directions in the box.  Put it in the fridge to set up.  

In another mixing bowl, mix the cream cheese with powdered sugar.  Fold in one tub of the Cool Whip.

Now to finish the rest of our dessert and layer our ingredients... On top of the Oreos, spread the cream cheese mixture.  

The next layer is pudding,

Add the last tub of Cool Whip on top of the pudding and then the reserved Oreos.

Mimi's Excellent Easy Pie

Did you know that this is National Pie Day?  Our teachers had some fun with this special occasion as they brought their favorite pies to school to share with the rest.  I thought I'd share the recipe for my sweet Mimi's favorite pie.  It is quick and easy to make.  Sorry I don't have any step by step pictures for you today, but you won't need them.  It's that simple!


Mimi's Excellent Easy Pie
1 can Eagle Brand Milk
1 small can crushed pineapple, drained
1 c. chopped nuts
1 (8oz) container Cool Whip
1/2 c. lemon juice
10 in. graham cracker crust

Mix the first four ingredients in a bowl.  Gradually add lemon juice.  Pour into crust.  Refrigerate.  Serve when chilled.

Six Layer Magic Cookie Bars


You may already have this recipe or one similar to it.  Since I'm going to make a book from all the recipes that I have posted on my blog, and this cookie recipe is my mom and son's favorite...I definitely have to include it.  Making these Six Layer Magic Cookie Bars is quite simple.  Here are the ingredients:

 1 stick butter
1 c. graham cracker crumbs
2 c. semi sweet chocolate chips
1 c. coconut
1 can sweetened condensed milk
1 c. chopped pecans

Preheat oven to 350 degrees.  Put the stick of butter into a 9x13 inch pan and put it in the oven to melt the butter.  (or melt it in the microwave)  Add graham cracker crumbs to butter and mix pressing into pan to make a crust that covers the bottom of the pan.  Add the chocolate chips, coconut, and pecans in layers.  Drizzle the sweetened condensed milk over all.  Bake for 25 to 30 minutes.  Cool and cut into squares.  This is a single recipe.  You might want to go ahead and make two pans while you're at it.  They are sure to be a favorite in your family, too.

Fall...I love everything about it...the decorations, cooler weather, the colorful leaves on the trees, the smell of pumpkin....  Since I held a fall craft class last night, it was only fitting that I make one of my favorite fall recipes-Pumpkin Muffins.  This simple dessert has only two ingredients in it.  Yes, you read that right...only two!  Let me show you how to make them.

Place a box of spice cake mix (I used Duncan Hines) and a 15 oz. can of pumpkin in your mixer.  Blend well.  (You don't need to add eggs, oil, or anything else.)

Spray your muffin tin with a non-stick spray and drop dough by spoonfuls into muffin tins.  I used the tiny bite sized variety.

Bake at 350 degrees for 13 minutes.  Adjust the time for larger muffins following the directions on the cake box.

  Enjoy this wonderful fall treat!

My husband was quite excited to find rhubarb in the store the other day, because he could then make his favorite dessert...Rhubarb Pie.  I may need to explain to my southern friends that rhubarb is a fruit that looks like celery but is red in color.  It's even stringy like celery but tastes much different.  Whereas celery is very mild in flavor, rhubarb has a bitter/sour taste. 

The recipe below was given to Arlin's mom at her wedding shower in 1961.  It's been a favorite in the family since then. 

Let's get started making it.

You'll need 2 cups of rhubarb cut into fine pieces (1/4 of an inch or smaller).

Add two rounded tablespoons of flour. 

A cup of sugar goes in next.  Mix all ingredients. 

Place mixture in pie shell. 

Pour 3/4 cups of heavy whipping cream over the top.  Bake at 350 degrees for 50 minutes. 

Cool before serving.  Was that easy, or what?  Darlin Arlin was in heaven eating his favorite pie!

Vanilla Wafer Cake has been a family favorite for many years.  Instead of any type of flour,  it uses vanilla wafers as the base of the cake.  I  hope it will soon be one of your favorites, too. 

Vanilla Wafer Cake
2 sticks margarine, softened
2 c. sugar
1 c. chopped pecans
1/2 c. milk
6 eggs
1 (7 oz) flaked coconut
12 oz. box vanilla wafers, crushed.  I could only find an 11 oz. box.  Have you noticed how our boxes and containers are getting smaller?   It didn't seem to make a difference in the results of the cake.

Cream the butter and sugar together.

Add eggs one at a time.

Put in all other ingredients.

Mix well.

Grease your pan very well.  I used Pam Spray.  Pour mixture into pan and bake on 350 degrees for 1  hour, 5 minutes.  

This cake seems to come out of the oven a little dark, but everyone always comments about how moist it is.  I put a plate on top of the bundt pan and tried once, twice, three, and four times to pop it out.  I'll just say it didn't come out picture perfect this time, but my friends didn't seem to mind!

Before making my first recipe post, I have to tell you that I am no Julia Child!  I like recipes that are quick, easy, and taste good.  If a recipe has many more than five ingredients in it, I'm probably not going to attempt it.  I found the following recipe on one of my favorite cooking blogs called Pearls, Handcuffs, and Happy Hour.  It seemed to be a hit last night with my friends at our spring scrapbooking class. 

Symphony Brownies


Ingredients:
Brownie Mix (I used Pillsbury)
3 Symphony Candy Bars

Prepare brownie mix according to directions on the package.  Grease a 9x13 pan.  Pour half of the brownie mix into the bottom of the pan.  Remove the Symphony bars from the package and place on top of the mix.  Spread the remaining brownie mix on top of the candy bars.  Bake according to the brownie directions.  Let cool, cut, and enjoy!
